Warming pumpkin Soup with Toasted Walnut

Warm, comforting, creamy and pumpkiny soup is always ideal for all holiday  season, plus healthy and savory, sparkling along with toasted walnut topping, family and  friends  will be impressed .

Ingredients:

        Japanese  pumpkin    Half, peel and dice  ( medium size …200 gm) 

        One red onion             2 small red potatoes       garlic 2 cloves

        Skim Milk / Full cream   1 cup

         Walnut 50-60 gm (crash coarsely )

         Serves 3-4

Steps:

 1:     pumpkin peel and dice  ( or…..can pure pumpkin puree 200 gm ) 

          Garlic    2 clove mince/slice   Potato  peel and dice

2:    Walnut crash coarsely and toast, set aside

3:     Hot pot hot oil,saute garlic and onion  till  tender and fragrant

4:  add diced pumpkin and potato, saute till fragrant

5:  pour 1000 ml  water together with veggie  boil for 15 mins, slimmer for   

       15-20 mins until all veg  are soft,turn off heat…

6:  blend soup with an emulsion  blender  to puree the soup

7:  slimmer 5 mins more, salt  to taste, turn off heat.

 8: stir in 1 cup of cream or milk.

9: garnish with toasted walnut, done and enjoy.

Tips:

           * recipe can be replaced  by one  potato as if  too starchy for 

           personal preference ,  or add in two cups of milk instead*.
