Leftover egg yolks from macaroon making never a problem as you are not living alone…
Are you interested in another savory recipe using egg yolks as an appetizer or even as an entree ?
1: 400 g egg yolk ( leftover egg yolks from macaroon making……)
2: spinach+ baby Kale 50-70 g 1 cup slice cherry tomatoes 2 green onions chopped,
1 red bell pepper diced, 1 cup mushrooms (pieces and stems)
3: 1 cup shredded mozzarella 1 small garlic clove chopped
1 : -heat 2 tbsp canola oil in a non-stick frying pan over medium heat.. - add garlic till fragrant, then add mushrooms,green onions,tomatoes, peppers and 1 cup shredded mazozzarella, - dash of salt, saute for 1-2 minutes, dish up and set aside.
2 : whip egg yolk with 1 tbsp of canola oil and 1 tsp of salt and pepper , set aside.
-preheat pan for 1/2 minute..add 3 tbsp canola oil onto the pan,
-then pour 1/2 egg yolk onto the pan, pan fry 1/2 minute with medium heat…
3 : add cooked veggies, lastly put spinach and baby Kale on top of the egg ..
– pour the remaining 1/2 egg yolk all over the pan …
-use a wooden spatula slightly even the top and edges….
-and cook few more seconds with medium heat..
4 : place a plate over the pan…
then carefully flip it over and transfer the egg back to the pan…
5 : pan fry 1/2 minute…or till fragrant and golden , dish up and serve hot with chili sauce .
