Strawberry Mochi with Red Bean Paste

Ingredients: 

A: Dough

1: rice flour   1 cup (  measuring cup)   corn flour  1/4 cup  wheat starch  2 tbsp

2: fresh strawberry juice  300 ml

3: grape seed oil    2 tbsp

4: icing sugar         1/2 cup (1/2 cup to 1 cup ..optional )

a-Strawberry juice..

1:  450 gm fresh strawberries

2: cut, clean and drain

3: add 2 tbsp  castor sugar and macerate 30 mins for more syrupy

4: add 300 ml boiled water together with the strawberries into a blender ..

blend until smooth as juice.

B: Filling 

1: 8-10 small size fresh strawberries

2: red bean paste  250-300 gm  (make into 8-10 small balls weighting  around 25 gm each )

 * place strawberry in the center of the red bean paste, roll in to  balls.

Steps: 

1: sieve all flour,mix with strawberry juice and grape seed oil into a smooth batter,set aside.

2: pour the batter into a oiled plate , steam for 10-15 mins , dish up ,cover and cool

3: after cooling,put into a plastic bag and knead until smooth…

evenly cut into 8-10 parts..(40-45 gm ) flatten  edges and ready for filling …

place the filling into the middle of the dough,pinch edges closed.

Roll the Mochi more smoothly and dust with icing sugar,done and enjoy.
