Hot & Spicy XO Sauce Taro Cake~Wu Tao Go

Popular Chinese  New Year Dim Sum ..

Ingredients:

1-1 kg  taro   cut into 1 inch cubes

2-crumbled bacon  about 100 gm

3-dried shrimp      about 100 gm

4- xo chilli sauce  3 tbsp (homemade xo sauce..optional)  1 tbsp five spice powder

5-rice flour    300 gm

6-wheat starch    3 tbsp

7- 3-4  scallion stalk     a  handful of coriander   (cut into small pieces)

8- 900 ml water

Steps:

1- hot oil hot pan, saute  dried shrimp, bacon with one chopped shallot…1 min

2-add 1 tbsp five spice powder, 3 tbsp xo chilli sauce ,stir fry until  fragrant

3-add the mince scallion stalk and coriander ,stir well and dish up ,set aside.

4- add taro to the hot wok,salt and pepper to taste…saute 1 min…

5-add 500 ml water into the wok and slimmer for 15 mins with medium heat ..

6-in a bowl sift rice flour and wheat starch ,then add 400 ml water and mix thoroughly..set aside

7-pour 3/4 mixture of dried shrimp and bacon to the cooked taro, stir well..

8- add the flour mixture to the taro mixture ,blend quickly and evenly until a  paste forms

9- pour the batter into  two oil sprayed cake pan,top with  the 1/4 of the remaining

dried shrimp and bacon mixture .. get  ready to steam…

10- steam the taro cake for 45-50 mins with medium heat,turn off the heat .

Insert a skewer into the cake, if it comes out clean, it is done.

 Tips-  spare a small bowl for tasting ..

  Serve hot with cutting the taro cake into rectangle slices..or

   allow the taro cake to cool completely,then pan -fry

   both sides of the slices until golden brown and crispy.
