Rice Casserole with Preserved Meat~臘味肉片飯..

Simple Ingredients..

1: Chinese sausages, salted duck leg

2: special Chinese sauce (soya sauce mix with oil)

材料…..肉腸、潤腸各1條,煲仔飯豉油,蔬菜少許

Soak sausages and salted duck leg with boiling water for 1 min,so as to rinse off

the excess greasiness.

用滾燙水去油1分鐘,避免過份油膩

Cook rice with clay pot,till almost cooked but still with bubbles….

用瓦煲,冷水下米、中火、水滾至幾乎乾水,但還是起泡泡…

Note: 1-1-2 proportion of rice and water

註:      1-1-2 米和水的比例

Top rice with sausages and salted duck leg,cook till cooked.(about 3-5 mins more)

快手放材料於飯面上,煲至全熟(大約3-5分鐘)

Rice is cooked, meat also ready…

米成飯,肉也熟…

Heat oil in a wok and saute veggies….

爆炒蔬菜…

Add pork loin and saute until mostly cooked…

炒香肉片至幾乎熟….

Top veggie and fried pork loin on rice next to sausages and salted duck leg

快手將配料、肉片、蔬菜,ㄧ齊放入飯上…

Rest 1-2 mins  悶焗1-2分鐘

Chop and slice the meat, pour Chinese sauce all over the rice, done and serve.

鴨腿斬件,臘腸切片,淋上煲仔飯豉油即成,慢用

1- dish up and serve with a big bowl

可以擺件上…大碗

Serve with pot~~ enjoy~原煲上~慢用
