Red Dates Sticky Cake ~Asian festival

Ingredients :
A-
1: red dates about 300 gm ( stone removed)
2: raw slab sugar 3-4 pieces

B-
1: Glutinous rice flour 400 gm ( I package )
2: tapioca flour 50 gm Wheat Starch 50 gm rice flour 100 gm
3: veg oil 3 tbsp
4: Red dates juice 800 ml

Yield- 2 small 8″ x 4″ square pan

1:wash the dates, use a big pot with water and slimmer for 30 mins,then set for 60 mins.

2: Strain well and retain the red date juice about 800ml

3. add the raw slab sugar into the red date juices , slimmer until sugar all melted
and set aside.

4: sift all flour, gradually add into the warm red date juice,stir to combine.

5: add 3 tbsp of corn oil or vegetable oil as a final stir of the batter..

6: pour the batter into a well oiled pan and steam with boiling water in a steamer for 60 mins over medium heat. ( plenty of water to start with)

7:remove the pan and let the cake set for 60 mins to make sure it i s completely cooled

8: use a sharp small knife or spatula to loosen the sides and turn the cake out , this is a sticky cake so quite sticky even it is cooked

Tips :

Make the sticky cake in advance before Chinese New Year ,refrigerate the cake after it is done, so as to harden for easier cutting to slices, then pan fry and serve.
