Pandan and Durian Mochi @ Rosacooks

This dessert is very unique and is very popular among gatherings and holiday seasons on my dessert table…

The special aroma of this dessert is so exotic that I should share the recipe here so everyone may wrap it “s wonderful flavor and fancy, sounds good, right ?

 

Ingredients : ( about 12- 13 Durian Mochi )

A – Dough

1 – glutinous flour    2 cups      corn starch  1/2 cup     wheat starch flour  1/4 cup  milk powder   1/4 cup

2 – avocado oil          2 tbsp

3 – icing sugar           1/2 cup

4- fresh Pandan juice    600 ml

 

B : Filling 

1 – fresh durian      3 pieces   ( stone removed )

2 -soft butter ,  milk and corn starch       2 tbsp each

C : 

1 – some shredded coconut , icing sugar and toasted glutinous flour for dusting.

 

Steps : 

1 – sieve all flour together , add  pandan juice and avocado oil …

-and mix into a smooth batter…

–  sieve again and set aside.

 

 

 

-pour the batter onto an oiled plate , steam for 20 minutes , dish up , cover and cool.

 

 

3 – mix corn starch with milk evenly , pour onto a pot with durian ,

– slimmer till creamy and paste like , dish up and cool before filling.

 

 

 

4 – put the cooled dough into a plastic bag , knead or roll till smooth…

 

 

 

 

 

 

 

5 – evenly cut the dough into 12-13  parts  ( 60- 63  gm each )

– flatten edges and then ready for filling with creamy durian paste  ..😋

 

6 – scoop 1 tbsp of durian into the middle of the dough , nicely pinch edges closed.

* not too much at a time , look and judge or else the mochi leak *

 

7 – dust the mochi with bit of shredded coconut , cooked glutinous flour or icing sugar ,

– even the shape , and it is done !

*keep the mochi into a glass container  if not serve immediately !

 

 

 Already taken two for tasting !😝😛😋
