One pot meal is always my favor menu especially when time is concerned plus
frustrated with cold, a warm pot of scallop turmeric rice warms my freezing nerve for sure..
let see what is going on here….
Ingredients : ( serving for two )
1- 6-8 scallops ( fresh or frozen , optional )
-wash, drain and pat dry with kitchen towel.
– marinate with 2 tbsp sesame oil, dash of pepper for 3-5 minutes, set aside.
2- 2 cups jasmine rice, soak with water for 30 minutes, drain and set aside.
3- 300 ml n0salt added chicken broth
4- 1 tsp turmeric ,few mince garlic and ginger..
1- place clay pot on the stove over medium high heat…preheat clay pot for half minute…
2- add 1 tbsp of cooking oil onto the pot, saute garlic, ginger and turmeric till fragrant..
3- put rice onto the pot, add 1 tsp of salt, stir and saute till fragrant…
4- add in chicken broth, stir and bring to boil
5- reduce heat to low, cook 10 -12 minutes or until most of the liquid has been absorbed.
– turn off the heat and rest for 5 minutes more with the lid on.
6- while the rice is cooking, heat 1 tbsp of cooking oil in a pan over medium high heat,
– add scallops to pan with flat side down and fry for 1/2 minute, carefully flip over
and fry 1/2 minute more …
7- transfer the scallops over the pot rice, cover and rest for 5 minutes.
8- pour the soy sauce over the pot rice , done and serve hot.
* 1 tbsp black soy sauce, 1 tbsp brew sweet soy sauce and 1 tbsp brown sugar all mix with 1 tbsp cooked oil
as a homemade pot soy sauce *
Place rice onto a bowl and top with a scallop, enjoy. ..😋
