Simple Hearty Lobster Fried Rice

Not a fuss meal , not a versatile recipe just simply stir fry leftover lobster meat with handy cooked rice , again a leftover version ! Like simple egg fried rice with a bit extra lobster meat truly makes this dish quite impressive and special , therefore every family needs a leftover menu , right ?

Ingredients serving for 2 :

1 – a : grilled lobster tail..

 b :  hey, big portion leftover !

 

 

2 – diced lobster meat , two eggs , bit of diced shallots

 

 

3 – 2 cups jasmine cooked rice …. (use a rice cooker  )

   -just simply add a bit less water to avoid too sticky, a bit on the crunchy side

    if there is no overnight rice handy

   – add 1 tbsp butter when rice is still hot.

   -blend even and set cool..

–

 

 

Steps : 

1 – heat a wok over high heat with 1 tbsp of oil…

   – add beaten eggs and scramble gently…

 

 

2 – add rice over and stir evenly…

 

 

3 – add 1 tbsp turmeric powder , 1 tbsp of oil along the edge of the wok ,

   -then stir fry evenly..

 

 

4 – add diced lobster meat, mix well..

 

 

5 – add shallots… pepper and salt to taste …

   – stir fry till very hot …

   – and you can add some more oil if you want a bit greasy and fragrant

    together with hot sauce too..

 

 

6 – done and transfer onto a clay pot or dish up..

 

 

 

     * no MSG , no soy sauce * 

   ~ Enjoy  a hearty delicious meal ! 😘
