Servings-12 buns
Ingredients:
1: 3 +1/2 cups all-purpose flour
2: 1+3/4 cups warm milk ( 45C )
3: 2 tbsp soft butter
4: 1/4 cup sugar
5: 1/2 tsp salt
6: 1 tbsp active dry yeast
7: 1 egg + 1 egg white
8: 1 egg yolk + 1 tbsp honey ( for egg wash)
9: 1/2 cup dry raisin
10: 1 tbsp ground cinnamon
11: *reserve some flour on work table for sticky hands *
Cross Topping ingredients:
1/3 cup cake flour
4 tablespoons softened butter
4 ½ teaspoons icing sugar
4 tbsp milk
Steps:
1:Put 3 and 1/2 cups flour, 1 tbsp yeast, 1 tbsp ground cinnamon ,1/4 cup sugar, 1/2 tsp salt, 1 egg, 1 egg white in a hand mixer,
*gradually add warm milk and start on from low speed to high speed to form a dough
2: add soft butter and knead until smooth.
3: place dough in a slightly greased bowl ,cover with a plastic wrap,
and let rest in a warm place till double in size , about 45-60 mins.
4:Punch down the dough on floured surface,flatten and knead the dough with raisins.
* ( mix raisins with 1 tsp of cinnamon as desired )
5:shape dough into 12 balls and place each in a greased 9 x 12 inch pan with 1 cm apart .
Cover with plastic wrap or kitchen towel, and let rise for another 30 minutes.
6: preheat oven 350F
7: Prepare the topping:
Mix together cake flour, softened butter, 2 tbsp milk and icing sugar and transfer to a piping bag. Set aside.
8:Mix egg yolk and honey as egg wash
9: Once the buns have risen, brush with egg wash.
Pipe two stripes of topping mixture onto each bun in the shape of a cross.
10: Bake at 350 F degrees for 15-20 minutes or till cooked and brown.
Remove from oven and cool on wire rack.
