Ingredients: ( 4-6 serving )
1: 1 can chickpeas
2: 1/2 cup fresh lemon juice
3: 1/2 cup tahini
4: 1/2 cup olive oil
5: 1-2 cloves of garlic ( minced)
6: 3/4 cup of chickpea can juice
7: 1-2 stalk minced parsley, 2-3 tbsp paprika powder
Steps:
1: open the can, drain the chickpeas, save the can juice.
2: squeeze lemon and save 1/2 cup of the juice, set aside.
3: combine the tahini,lemon juice,and garlic in a food processor, process 30 seconds,
add 1-2 tbsp olive oil, process another 30 mins till all well blended.
4: add half of the chickpeas to the above, process 1 min, then add the other half and process..
gradually add can juice then add remaining olive oil, process till thick and smooth.
5: Salt to taste, dish up onto two bowls, one dash of paprika, one with minced parsley,
both serve with a drizzle of olive oil.
