Healthy Salmon Head Soup with Leek

This soup is simple to prepare ,plus tasty and very nutritious! My all time favorite soup…

Ingredients:

1: 1 large  salmon fish head (dice,clean, drain and dry)

2:1 stalk leek  ( cut into 2 cm length)

3: tomato  3-4 ( blanch,peel and cut into pieces)

4: tofu  2 pieces  ( cut into cubes)

5: 2  shallot  1 clove garlic  3 slice ginger  2  stalk coriander root ( all cut and slice)

6: chicken broth 900 ml   water 400 ml

Steps:

1:tomato  blanch, peel and dice , set aside.

2:  dry fish head with paper towel,season with fish sauce (2 tbsp),2 tbsp  corn starch

pinch of pepper ..( 5 mins)

heat wok with little oil, fry fish head both sides over medium heat 1 min, dish up and set aside.

3: In the same wok, add shallot, garlic, leek ,ginger and saute till  fragrant, dish up .

4: Put chicken broth and water into a pot, add saute garlic,leek ,shallot, ginger and bring to boil.

5: Add tofu, tomato, fish head and cook for 3-5 mins  with medium – high heat,

add salt to taste,done and serve hot.

Dish onto soup bowls, sprinkle shredded coriander and serve hot, enjoy.
