
This steamed bun known as Gua Bao on their own, and you can stuff them with any savoury dishes you desired. It consists of a flat steamed bun folded halfway to hold your favorite fillings , such as a piece of braised pork belly, marinade stir fried beef , or even curry meats , typically topped with some fermented vegetable, spring onion ,coriander, etc. I like served it as a quick lunch with my leftover meats and some fresh veggies if possible. So it is my handy buns and favorite standby snacks sometimes.
DOUGH~
Ingredients
- 1 – 2 cups of all purpose flour, plus extra for dusting
- 1/2 cup of milk powder.
- 2 tbsp of caster sugar.
- 1 tbsp of fast-action dried yeast.
- 1 pinch of salt.
- 1/2 tsp baking soda
- 1+1/2 cup of warm water
- 1 tbsp of cooking oil
Steps…
1- Mix all the ingredients and knead for 9-12 minutes until get a smooth and soft dough. Shape it to a large ball and cover with a wet cloth.
Set aside for proofing (around 1 hour).When the dough is about 1.5 times , (* no over-proofed) in size, transfer out and re-knead until smooth in surface again (a must ..smooth surface).
Divide into 8-10 portions. ( you choose your own size of the bun )
Knead each of the portions for 1 or 2 minutes until smooth in a ball shape.
2- Roll each of the small balls to an oval like shape.
3- brush with oil on the surface.
4- fold the dough over, using a chopstick in the middle to leave a little space in the fold
5- Place on a steamer pan to rise for another 15 mins
6- Then steam for 15 minutes with medium high heat , turn off the heat and rest for 10 mins before taking out.
7- stuff your favorite fillings and serve.
