Grilled Tilapia Fillets with Tomato Sauce

Ingredients:

1: 4  tilapia   fillets

2: 6 tomatoes   chopped

3: 2 shallots     1 clove garlic    finely chopped

4: coriander  leaves                  1-2 stalks          finely chopped

Seasoning:

1: 1 tbsp  capers   drained

2: 2 tbsp tomatoes paste

3: 1 tbsp balsamic vinegar

4: salt ,sugar and pepper to taste

steps:

1: season fillets with a dash of  salt, pepper and cornflour for 10 mins

2: preheat oven 450 F 5 mins ,grill fish 4-5 mins on each side..

3: top the fish  with 2 tbsp of butter and grill for 2-3 mins

or until fish just begins to flake easily with a folk,dish up and set aside.

4: hot oil, hot pan…

saute shallots, garlic, and tomatoes over medium heat until fragrant and soft,

5: add a cup of hot water,  tomato paste, balsamic vinegar,mix and bring to boil ..

salt and sugar to taste, add coriander and capers  then cook till the sauce is thicken..

6: pour the sauce over the fish, serve hot with rice, done and enjoy.
