Gluten Free Swirl Banana Bread with coconut [email protected]

I am sure there is always few ripe bananas on our kitchen table, and of course there is no shame too to turn this into a mouth watering snack or even better… a gluten free swirl banana bread with my recently favorite coconut flour recipe.

Well ,I also like to make my own gluten free flour combination too, so let see what is going on here…

Ingredients: 

A- Gluten free flour…

1 – buckwheat flour             1 cup

2 – coconut  flour                3/4 cup

3 – tapioca flour                  3/4 cup

4 – baking power                 2 tsp

5 – baking soda                    1 tsp

6 – xanthan gum                  1+1/2  tsp

B: the batter 

1 – 2 eggs  (beaten )  2 ripe bananas  ( mashed )

2 – coconut oil       1/2 cup melted and cooled

3 – coconut milk     3/4 cup

4 – pure vanilla extract    1 tbsp

5 – 1/2 tsp salt

C : The swirl 

1 – raw honey                 3 tbsp

2 – cinnamon power     2 tbsp

3 – coconut oil                2 tbsp  melted and cooled

Steps : 

 

1 – preheat oven  350 C

2 – sieve and mix all flour , add eggs,  banana paste , coconut oil , coconut milk,

and vanilla extract into a smooth batter, set aside.

3 – mix the swirl ingredients into a thick mixture, set aside.

 

4- place half smooth batter onto an oiled loaf pan ( 9″ x 5 ” )…..

5 – place half swirl mixture onto the batter…..

 

6 – top remaining batter and spread evenly….

 

7- top remaining swirl mixture  on the batter ,  spread evenly with a spatula ,

then stir from bottom  up to all sides  to create  a swirl .

8 – ready to bake…

9 – bake 350 C for about 45-55 minutes…. or until golden brown on top

and with a skewer  come out clean from the center  of the loaf.

10 – turn off  the oven and rest the loaf inside for 10 minutes…

-take out the loaf  and let it cool on a wire rack , slice after it is completely cool.

– serve and enjoy.😋😋😋😋😋😋😋😋
