A comfort family soup with easy preparation……

Thanks to my Burgundy friend Paulette who  shared her family recipe here which is such a hit you never miss!

Ingredients :

1: 3 or 4 large onions

2: 3 tbsp oil                   2 tbsp butter       1 tbsp flour

3: 4 cloves of garlic   1 -2 bay leave (optional)   fresh  thyme (some )

4: 1 1/2 or 2 liters water

5: 3 beef bouillon tablets

6: pepper to taste

7: American asiago cheese or Swiss gruyere or emmenthal grated Quantity is up to you

    whether you like lots of cheese or little.

*I do not add salt as beef tablets and cheese are salty enough

  few  slices of baguette bread toasted under the broil*

Steps:

1: Peel and slice onions

2: Put oil and butter in a large frying pan or a deep pot……

     saute onions…

3: Brown onions to a nice color….add garlic, thyme,bay leaves…

4: Add the flour. Stir .

5: Add water , bring to a boil, add beef bouillon tablets.

6: Let cook for about 25-30 minutes with low heat….

7: Meanwhile toast bread slices, grate cheese.

8:  When it is cooked, place a few slices of bread in soup ….

9: place soup in an oven proof bowl, and spread grated cheese over bread….

10:  Sprinkle more cheese and place under the broil

       until nicely browned (or just melted, to your taste.)

11: Grind some pepper over the plate ,done and enjoy.
