Expresso Cotton Cake Ho Ho Ho


Ingredients:
1- cake flour 1 cup +expresso coffee powder 1/4 cup
2-Eggs…. 7 large or 8 small (separate egg white/ yolk )

3- Sugar 80-100gm fresh milk100 ml
4- grape seed oil or avocado oil ..1/4 cup
Steps—
1: sieve cake and expresso powder , all together2-3 times and preheat oven
2: whisk sugar (80gm) egg yolks ,oil and milk,then add sieve flour , and combined well.
3: whip egg white (add a dash of salt) with (20gm)castor sugar until stiff and shining, then mix 1/3 to the egg batter and blend even. Finishing the rest egg white with the batter , again gently mix well.
4: pour into the baking tins with the parchment paper surrounded , (two 6″or one 9″))
Bake 300 F 50-60mins with water bath method
( place the baking tin onto a deep plate with hot water )
5: take the cake tin out and demould, serve hot or cool.
