Curry beef Pie with homemade pie crust

 This homemade – style beef pie is a savory snack or meal on the go which contains flavors of rich  curry gravy with succulent beef, worth to try  every once in a while on a boring afternoon,

why not ?

Ingredients: 

A- pie crust ( one double – crust 8 1/2  or 9 inch pie )

1- 3  cups of all purpose flour.

2- 1 tsp salt

3- 2 tbsp sugar

4- 1/2 cup unsalted butter ( chilled, use a cutter to slice into small pieces )

5- 1/2 cup of  shortening

6- 1/2  ..3/4  cup of ice water

steps: 

1- in a large bowl, combine flour, salt and sugar.

2- cut in butter and shortening  and use hands to combine until mixture resembles coarse crumbs.

3- put in water, a tablespoon at a time, lightly mix by hand until mixture  forms a ball…

4- use a spatula to press  on the dough crumbs a few times, no kneading.

5- wrap the dough in plastic wrap and refrigerate at least 30 minutes or more before use.

B- filling  ( serving 2 -9 inch pies… may have some filling left over )

1- mince beef   1  + 1/2 pounds

2- mix green beans     1 cup     one small bell pepper ( finely chopped )

3- one large red onion,  coarsely sliced and chopped

4- one leek    finely chopped

5- 3-4 garlic cloves   finely chopped

6- 2 tbsp curry powder  + 1 tbsp paprika

7- 2 tbsp brown sugar  + 1 tbs sambal paste

8- 1/2 cup coconut milk

9- one egg lightly beaten

10- 1/2 cup water

11- 1  tbsp corn starch ( mix with 1/4  cup of water )

12- 2 tbsp of cooking oil

13- shredded Mozzarella  1 cup

Steps of making filling-

1- combine curry powder, paprika,,  sugar , sambal paste and egg  with beef,  mix well.

add 1/ 2 cup of water at last to the mixture, again mix well and rest  30 minutes.

2- heat oil in a pan with medium high heat, saute garlic, leek and onion till fragrant….

3- stir in beef and fry for 2 minutes, add mix green beans and stir 1 minute more..

4- add coconut milk and corn starch water, bring to boil and reduce heat to simmer till

beef is cooked .

5- dish up and set aside to cool completely.

C : Baking 

1- preheated oven at 350 F

2- take out the dough, remove the wrap  and cut the dough crust into half, each about 280 g ..

3- flatten the dough slightly with hands,  roll it out with a rolling pin on a lightly floured surface

until large enough to cover the prepared pie dish.

place the pie pastry onto the pie dish,  cut off any excess pastry, press around the rim,

use folk to poke holes on the dough.

4- sprinkle 1/2 cup of  shredded  Mozzarella onto the base…

5- spoon beef mixture into the pastry base…

6- top with the other half of shredded  Mozzarella ..

7- place the second dough crust over the filling, trim excess and press edges with tines

of a folk to seal.

cut lines in the top  to allow steam to escape.

brush the pie crust with egg wash.

8- place on a baking tray , bake  350 F  ..35-45 minutes or till golden and puffed.

( turn position of tray half way through baking for more even golden brown color )

9 – cool pie to warm before serve, about 10-15 minutes.
