Baked pork chop rice @ Rosacooks

One of my favourite one dish meal as the pork and rice cook and bake in the same dish. The rice is flavourable as it looks , and the pork chops come out juicy as it looks too..😋

Ingredients: ( 3-4 Servings )

1 -some garlic  chopped , 1 small ginger sliced , one medium onion shredded ,set aside.

2 – pork chops.. 1 and half pounds , pounded with hammer lightly

…(marinated with 1  tbsp salt , garlic powder, pepper , corn starch 1 tbsp each , *sugar optional)

3 – 2 medium size tomatoes , peeled and sliced , mix cherry tomatoes some cut into half ,  3 tbsp homemade tomato sauce..

  (*homemade tomato sauce can be replaced by Ketchup )

4 – 3 cups of rice cooked , (better use over night cooked rice ) , use folk to loosen the rice before stir fry , set aside.

5 – two eggs beaten .

Steps :

 1 – two eggs beaten , pour over the loosen cooked rice….

 * mix well , set aside.

 

2 – add 2 tbsp cooking oil over a heated wok , stir fry the rice  evenly with medium heat.

 

 

 

( pour  the rice onto a baked pan )

 

 

3 – stir fry garlic, ginger and onion till fragnant with medium heat on a heated wok ..

 

4 – add pork chops onto the wok , slightly pan fry the marinated pork chops  one minute each side…

5 – place the above on top of the rice pan…..then

    – put  it inside the preheated oven..

 

6 – bake 350 F .. 1o minutes

 

7 – meanwhile prepare the sauce…

  – stir fry the tomatoes with 2 tbsp cooking oil , add in tomato sauce….

   – a bit of water if necessary , salt  and sugar to taste.

  – corinader optional..

 

 

 

8 – carefully pour the sauce over the baked rice and baked 5 minutes more…

 

9 – rest the baked inside the oven 5 minutes more before take it out from the oven.

 

10 – done and serve hot , enjoy.
