A super easy comfort food that I almost make once a week , a bit here and there and best of all
it”s delicious and healthy as we all know avocado is group under super food, right ?
1 – 1 can of flaked or solid white tuna … * whatever inside my cupboard 😚
2 – 1 ripe avocado
3 -2 eggs ( boil and shell , set aside )
4 – half of a lemon ( juice and set aside )
5 – 2-3 tbsp yogurt salad dressing (savory dill )….sure it is much better than mayo !
6 – 1- 2 tbsp Tabasco 😝 ( optional )
7 – salt and pepper to taste
8 – small handful of fresh peppermint ( fresh from my garden ) chopped, about 1/2 cup.
1 – avocado halved and pitted, scoop and mash it , set aside .
2 – canned tuna drain, add peppermint , Tabasco and season with salt and pepper..
– add lemon juice, mix well and set aside.
3 – diced eggs , mash with yogurt salad dressing , mix well..
4 – put everything together inside a big bowl, stir and taste until all well mixed ,
-save inside a glass container with cover , and place it inside the fridge before serve.
– serve on bread and wrap, top on salad or whatever you like.., eat plain ?
5 – I usually make a small portion every time as to score freshness, any way it”s easy , right ?
*Last week version..no green added..
* This week version..with fresh peppermint from garden~
* Toast version…
* Pita Bread… last last last.. week version~
