Garden salad top with smoke octopus is always my easy and favorite dish on hot Summer days…
Simply ready a package of greens and some frozen octopus, with little tricks here and there, an encouraging adventurous
and a mouth watering fresh dish bang bang on the way !
Ingredients:
1: 1 package of frozen octopus 300 gm
(available in Korean or Japanese super market )
2: 1 package of prewashed garden greens
(some feta cheese , black or green olive as desired )
Sauce :
1- mirin ( sweet cooking seasoning ) , raw brown sugar ,rice vinegar , Japanese soy sauce … 1 tbsp each
2- olive oil toasted black sesame ..2 tbsp each
3- mix above all well and set aside
Steps :
1: octopus thawed and rinsed , marinate with 2 tsp sea salt on a plate or a bowl
and put inside the fridge for 30 mins
( plate not covered for a better crunchy texture )
2: a-layer 2-3 foils onto a wok , dash some rice, tea leaves and brown sugar …
b-then place a steaming rack onto the wok so as to get ready to smoke octopus…
3: place octopus on the rack, covered and turn on high heat to smoke for 10 mins..
4: turn off the heat after 10 mins, rest for 10 mins more , then take out the octopus,
done and set aside.
5: slide or cut octopus into small pieces, then transfer to a bowl of greens,
pour sauce with toasted black sesame, slightly mix and let stand 5- 10 mins for flavors to develop.
