惹味酸辣魚頭米粉湯~

材料

1:三文魚頭1個(切塊、清洗、瀝乾備用)
2:米粉300gm大約半包 (2人份量)冷水浸透、瀝乾備用
3 : 冬蔭 酸辣醬 1湯匙 咖哩叻沙即煮醬料 100g. 水 1500ml
4. 䓤、蒜, 芫茜 酌量。檸檬半個 (切小塊)

步驟~
1:三文魚頭塊用廚紙印乾、下少許魚露(大約2湯匙)、生粉、胡椒粉稍醃片刻
2:魚頭上乾生粉

熱煱熱油中火煎香魚頭、(1-2分鐘)再用廚紙索表面浮油、上碟備用

3:置軟身米粉於碗中(2碗平等份量),加入自選調味料⋯少許麻油、醬油
微光爐叮半分鐘,取出備用

4:煱中加1500ml熱至滾,下1 湯匙冬蔭醬、少許蒜頭粒

再加入叻沙醬至大滾

5:下魚頭、中火滾 3 分

5:下魚頭、中火滾 3 分鐘,取出魚頭置於碗中

6:滾湯再加入碗中、洒上䓤花、香菜、檸檬汁,即成。
註:魚滑湯滾味辛辣,別一番南洋滋味,趁熱享用。
